A combination of two Osaka favorites: okonomiyaki and yakisoba noodles. Modan-yaki was invented at Botejyu® during the period of rapid economic growth after World War II, and this dish has its origins in the “fully loaded okonomiyaki” that the cooks would make for themselves. Eventually, this became a secret menu item offered only to regular customers, and the Japanese name slowly changed to the stylish and modern-sounding “modan-yaki,” which spread nationwide as this became a standard menu item.
