Toshomen is a long-beloved local noodle dish from the Xi’an region of China. It is neither ramen nor udon, but something all its own.
These noodles begin with dough made from wheat flour, formed into a block. The cook then uses a special knife to shave off noodles that fly directly into a pot of boiling water.
